What is Wagyu?

Wagyu is a heritage Japanese cattle breed. The word Wagyu (和牛) is made up of of ‘wa’ meaning ‘Japanese’, and ‘gyu’ meaning ‘beef’. Wagyu is renowned for its intense marbling and rich flavour.
