Wagyu fat is extremely rich in monounsaturated fatty acids and contains all of the essential amino acids, including omega-3 and omega-6 fatty acids which are unique to the Wagyu breed.

These acids, especially oleic acid, contribute to Wagyu's famous buttery, umami flavour.

Black Origin Wagyu tallow is created from 100% Wagyu beef fat.
